I'm looking for a great mashed potato recipe?
If you are making mashed ptoatoes then use white potatoes. Red skinned potatoes are for boiling (potato salads, etc). Cut them in uniform slices or chunks (nothing smaller than a ping pong ball. You can either leave the skins on or peel them first. Boil them until they practically fall apart then drain them. They are best when you salt the water they are boiled in first. Potatoes soak up a lot of salt so be careful you dont make them too salty (A nice reminder is that if you every make a soup that is too salty, just add a potato and that will do the trick as it will soak up much of the salt and the potato can then be thrown away or used for something else) For good tmashed potatoesd potatoes use cream or evaporated milk, real er, salt and freshly ground pepper. To make the twice-baked potatoes you are referring to, use the same ingredients I just listed then add sour cream, Shredded cheese of any kind (I like sharp cheddar) and I also like to add a small sprinkle of garlic powder and onion salt.
